Southern Style Collard Greens

3 pounds of collard greens
1 smoked ham hock
1 onion chopped
2 teaspoons minced garlic
3 teaspoons cider vinegar
3 teaspoons corn syrup
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper
1/2 teaspoon white pepper
A few dashes of hot pepper sauce

Cut off & discard base of stems. Coarsely chop upper stems and leaves. Wash and drain thoroughly.Put 1 cup of packed greens in blender or food processor,puree and set aside. Place remaining greens along with the ham hock in a large pot, cover with water. Bring greens to a boil, add onions, garlic, corn syrup andseasonings, reduce heat to a simmer. Add pureed collards,cover and cook for 2 hours or until greens are tender.
